As we all know, two-thirds of Indonesia is water. Hence, Indonesia is also known as the Indonesian Archipelago. This, to us, is truly a blessing, as it’s exactly because of such geographic conditions that we were able to create this Pemuteran Sea Salt.
It was all unprecedented. Mrs. Helianti, who was traveling to Bali and got lost on the way initially wanted to ask the locals the way. Yet, a greenhouse caught her attention and made her approach the person who took care of the facility.
His name was Mr. Gelgel, a local salt farmer who at the time was working under an exporting company. Having been interested in the unique shapes and the process, Mrs.Helianti investigated further and discovered the story of how the naturally pyramid-shaped salt was born.
According to Mr.Gelgel, he was able to produce the pyramid-shaped salt after partnering with a Japanese architect who designed the process of dehydrating the salt in a greenhouse. In that partnership, the Japanese architect was responsible for the sales and distribution to Japan, while Mr.Gelgel concentrated on the production.
The variety of salts were a combination of different minerals of the Bali seawater, innovative dehydration technique, and the intensity of sunlight. These combinations will determine the shapes of the salt. There are those that are coarse, fine, pyramid-shaped, or even cubicle. These shapes form naturally without the help of any molds. In addition to that, the process also created a salt crystal, otherwise known as Fleur De Sel, referring to the first layer of crystal that is made.
Everything went well until Mr. Gelgel’s Japanese partner fell sick, forcing him to go back to Japan to treat his illness. Due to that reason, the salt farm had to halt its operation as well.
Amidst that situation, a businessman approached Mr.Gelgel and promised him to become a special salt producer, where Mr.Gelgel would be facilitated with his own factory in his wife’s town in North Bali. The offer seemed very tantalizing for Mr. Gelgel, so he accepted the deal and started to teach him how to create the pyramid-shaped salt using a greenhouse.
Yet, everything was too good to be true. Even though Mr.Gelgel has kept his end of the promise, the businessman didn’t keep his and created his own factory in other areas instead. Mr.Gelgel was just a mere employee—the exact opposite of what Mr.Gelgel was promised, as well as what he wanted to be, a Salt farmer in Pemuteran so he could be close with his families.
Upon hearing the story, Mrs. Helianti took the initiative to introduce Mr.Gelgel to her parents and convinced them to invest in his business, so he could achieve his dream of having his own workshop. The offer was taken by Mr.Gelgel, and a joint-venture workshop specializing in gourmet salt was created in Pemuteran, North Bali. These salts are sold by Javara.
After a thorough optimization, distribution and marketing, the salt was then better known as Javara Pemuteran salt, named after the place where it originated, Pemuteran.
Of all the varieties, one of the most well-known amongst the locals is ‘Fleur De Sel’, a salt flower that formed from the first crystallization phase.
The Flower of Salt has an intense saltiness, it is also known as the ‘Balinese Sea Salt with a Blue Cover’. Other varieties such as pyramid-salt and rock salt are used often by westerners, foodies, and chefs.
