Broccoli Noodle Recipe: Rainbow Noodle with Salsa Seasoning & Pan-Seared Tuna

Servings: 2-3 people

Ingredients:

Salsa Ingredients:

  • 3 Medium-sized fresh tomatoes (1 pound), stem removed, diced
  • 10 Cherry tomato cut halves
  • ½ Red onion, finely diced
  • 4 Garlic cloves, finely sliced
  • 2 Serrano or 1 jalapeno pepper, stems and seeds removed, finely sliced
  • Juice of 1 lime
  • ½ cup chopped cilantro or ¼ cup thinly sliced kefir lime leaves
  • 2 tablespoons coconut oil
  • Salt and pepper to taste
  • A pinch of dried oregano/thyme and cumin, or more to taste

Preparation Method:

Fresh Salsa

Place all the fresh ingredients in a bowl, mix well.

Pan-Seared Tuna

  1. Season tuna loin with salt and pepper.
  2. Pre-heat 2 tablespoons of cooking oil in a skillet pan then pan-seared the tuna for about 2-3 minutes each side for medium-rare, or 5 minutes each side for well done.
  3. Let sit for 5 minutes after removing from pan, and cut slice around 1-inch thick.

Noodle

Cook Javara Gourmet Noodle in a pot of boiling water for 5 minutes then drain.

Cooking Methods:

  1. Heat 2 tablespoons of coconut cooking oil (or other oil) in a pan.
  2. Add the fresh salsa and sauté briefly.
  3. Add the cooked noodle and stir well.
  4. Season with salt and freshly cracked peppercorn as preferred.
  5. Add a pinch or more of oregano/thyme and cumin.
  6. Serve with some slices of pan-seared tuna.
  7. Garnish with roughly chopped coriander leaves or thinly sliced kaffir lime leaves.
