Main Ingredients:
- 1 pack Turmeric Gourmet Noodle, prepared as instruction in the label
- 1 cup bean sprouts
- 1 cup purple cabbage
- 4 lime wedges
- 1 handful fresh cilantro
- 2 red chilies (optional)
- 2 soft boiled eggs (optional)
Ingredients for Curry Gravy:
- 1 tbsp coconut oil
- 4 cloves garlic, minced
- 3 tablespoons curry paste
- 2 teaspoons freshly grated ginger
- 4 cups vegetable/chicken broth
- 14oz coconut milk
- 2 teaspoons soy sauce or tamarin sauce
Cooking Methods:
- Cook the Turmeric Noodle Al Dente (4 minutes in boiling water), set aside.
- Prepare the Curry Gravy:

- Preheat the saucepan and add the coconut oil.
- Sauté garlic until fragrant, then add grated ginger and curry paste, let cook for 1 minute.
- Add broth, coconut milk, and soya/tamarin sauce.
- Season with salt and garlic to taste.
- Add the bean sprout and shredded purple cabbage till lightly cooked.
- Add the cooked Turmeric Noodle, stir well.
- Garnish with coriander leaves, half-boiled eggs (halved), and lime wedges.
- Serve while hot.
