Javara’s Featured Products for Biofach 2021

Organic Coconut Sugar

Made from pure coconut (Cocos nucifera) blossom nectar, coconut sugar is one of the most ancient sweeteners of Indonesian archipelago. Coconut trees can be productive for sugar making up to 50 years, making it one of the world’s most sustainable sugar source. It requires special artisanal skill to tap the coconut blossom nectar, which not all regions with coconut trees can master. Our coconut sugar comes from Central Java which is considered as the capital of coconut sugar in Indonesia. We combined the traditional hand-cooked method and modern process in sorting and drying, to ensure we can deliver the best in terms of flavor, quality, and food safety standards. Coconut sugar gains its popularity in the global market due to its low glycemic index, and thus considered as a healthy substitute to regular sugars. Due to its slow release energy, coconut sugar also becomes a favorite among athletes and sports lovers who require endurance such as marathon, biking, and hiking. Up to date, we have been serving buyers of organic coconut sugar from over 20 countries.

Organic Arenga Sugar

Javara Arenga sugar is made from pure nectar of arenga tree (Arenga pinnata) blossom which is wildly grown in the tropical forests of West Java, Indonesia. It requires special skill of indigenous foragers that are passed down over generations. The nectar collection involves a very meticulous process to collect the coconut blossom nectar, which methods include meticulous pounding of the tree part where the blossom stemmed. Arenga is one of very important trees that helps to balance the forest natural ecosystem, maintain soil humidity, and prevent erosion. Collection of the blossom nectar does not influence the sustenance of the tree, and thus Arenga is one of the most ecological sugar sources. Similar to Coconut Sugar, Arenga Sugar also has low glycemic index and provides slow release energy.

Organic Spices & Herbs of Indonesian Archipelago

Since the ancient trade, Indonesian archipelago has been known as the notable source of world spices. Indonesia’s enormous spice diversity and high-quality flavors is the reflection of its unique archipelagic ecological landscape, stretched across the equator line intertwined with the ring of fire of volcanic mountains. Enriched with the indigenous knowledge on edible ingredients and in-depth culinary traditions in over 700 ethnic groups, Indonesian archipelago has seen and used over a hundred types of spices.

Indonesian archipelago also has a very rich diversity on herbs. They are essential elements of flavorful indigenous food found across Indonesia. Javara works directly with local farmers and indigenous communities to identify and bring the best of Indonesian spices & herbs.

Plant-Based Food Colorants

Indonesian archipelago holds enormous wealth on plant-based natural food colorants. They have been an integral part of the local culinary tradition. Javara plant-based natural food colorants are organically grown and processed using low-temperature process to retain its colors and nutrition.

Organic Toasted Coconut Flakes (Serundeng)

Toasted Coconut Flakes (Serundeng) is one of popular dishes from Indonesia. It is made from selected coconut, organic coconut sugar, galangal, and Bali sea salt. Sprinkle Javara toasted coconut flakes on top of soups, rice dish, salads, granola/muesli, pudding or gelato for extra crunch and flavor.
